I, personally, would recommend Outlaw Star, s-CRY-ed, and Tengen Toppa Gurren Lagann. Lucky Star is also good, although I like to refer to it as the Seinfeld of Anime and so you should be warned. The Melancholy of Haruhi Suzumiya is also a good series, as is Yakitate!! Japan - though if you want to watch Yakitate!!, you have to like puns. Or at least not be tremendously ...
